Grandma's Baked Corn

This is one of those recipes that you don't have written down, I know if from making it with Grandma. This is a dish we have every Easter, I remember every year Grandma and I having to talk through the recipe to remember everything that was in it.  This year Mom and I had to talk it through to remember it, now everyone will have this family classic.


Ingredients:
1 can creamed corn
2 cans whole corn -drained
2 eggs
1 sleeve of saltine crackers
milk
butter
salt and pepper to taste

 In a casserole dish combined the 3 cans of corn

 Crush up a sleeve of crackers and a mix in

 Cover with milk, and salt and pepper to taste.  Then add in 2 eggs, make sure everything is mixed up

 Top with little slices of butter

 Bake at 350 for about 30-45 mins, until it is set and a knife comes out clean

Dish up and serve! Enjoy!

Diane's Cheesecake

Ingredients:
Crust
1 1/2 cups graham crackers -finely crushed
2 Tbsp sugar
1 tsp cinnamon
1 stick of butter-melted
1/4 cup chopped nuts

Filling
3 (8oz) packages of cream cheese
4 well beaten eggs
1 cup sugar
1 tsp vanilla

Mix all the crust ingredients together 

Press into a buttered springform pan

Mix all the filling ingredients together 

Pour on top of crust

Bake at 400 for 25-30 mins.
Do not over cook, center will still jiggle a little.
Chill cheesecake for a few hours before removing springform ring

You can top with any pie filling.

Shannon's Quiche

Quiche are great and very versatile, you can put just about anything in them. This recipe makes 2 9" quiches

  Basic Ingredients:
6 eggs
3 cups light cream
1 1/2 tsp salt
1/4 tsp pepper
2 cups shredded swiss or mozzarella cheese-divided
2 frozen 9" pie shells

Possible add ins:
onions-chopped 
zucchini-chopped 
chicken-chopped
mushrooms-chopped
crab meat
chicken-chopped
kale-chopped
potato-shredded
peppers-chopped
bacon-crumbled
or anything you would like to add

 Make sure you remove the paper between the two pie crusts!

 Add in the filling you want mix together with 1 cup of shredded cheese per quiche.  

Mix eggs and cream together and pour into quiches.

 Bake at 425 for 15mins the turn oven down to 300 and bake for 30-45 mins.  Quiche is done when firm on top and a knife inserted in comes out clean.

Shannon's Turkey Feta Burgers

Shannon's turkey feta burgers are tasty and easy to make.  They are great to mix up and then make into patties and freeze them to cook at a later time. 

  Ingredients:
1 lb of ground turkey
4oz of crumbled feta
1tsp salt
1 tsp pepper
1 Tbs rosemary/thyme mixture
1 tsp garlic 
any other spices that you like


Mix everything together.  Make in to patties.

 Fry up patties.

Grandma's Date cookies

While these cookies are a Christmas staple in our family and Christmas wouldn't be the same without these tasty cookies, I have recently decided that these are my favorite cookies EVER!  I love them so much, they are sweet but not to sweet, they have a little hit of salty and if cut a little thicker are chewy and delightful!  The cookies are good fresh or dipped in hot chocolate or coffee when they get stale.  You might wonder how yummy cookies could get stale? Grandma loved to make tons of cookies at Christmas time and then put them in Tupperware and then poke them in the closet and not let anyone eat any.


Ingredients
1 cup oleo (butter)
2 eggs
2 cups brown sugar lightly packed
1 cup chopped pecans
1 cup chopped dates
3 1/2 cups flour
1 tsp salt
1tsp baking soda


After chopping up dates toss them with some of the flour to stop them from sticking together.

Dates after they have been tossed with flour.

Cream butter and brown sugar together, then add eggs.

 Mix flour, salt, and baking soda together and add to butter sugar mixture.

mix in dates and nuts


 Divide mixture into two, and form a log on a log on a piece of wax paper, repeat with other half.

 Place both logs in the refrigerator overnight.

Slice logs in to 1/4 inch slices.

 Place on baking sheet and bake at 400 for 6-8 minutes.
