Grandma's Lasagna

Who doesn't love piece of cheesy lasagna? This recipe comes from Grandma but for this version I added some of my own tweaks (I added mushrooms and am trying fire roasted diced tomatoes) and one from my mom (she said to dice up the green pepper and mix it into the cottage cheese).  I once watched my brother Mike heat up some leftover lasagna and put ranch dressing over it, that is one tweak I won't be doing.

Ingredients:
2 lbs hamburger
2 cloves garlic
1 can tomato sauce
1 can diced tomatoes
1/2 mozzarella cheese
16 oz cottage cheese
1 green bell pepper
2 cans of mushrooms
salt
oregano
pepper
onion flakes

Brown hamburger with the garlic, onion flakes, salt, pepper and oregano

after meat is browned, add in mushrooms and cans of tomatoes and simmer for 20 minutes. I also add a couple teaspoons of sugar to the sauce to cut the acid

Dice up bell pepper

Grate cheese

Mix in the green pepper with the cottage cheese
boil 9 lasagna noodles, I just boiled them long enough to make them soft

In a 9x13 pan put a little sauce in the bottom and lay 3 noodles on top

add a layer of sauce 

and then a layer of cottage cheese and green pepper mix, use 1/2 the cottage cheese mixture

add a layer of cheese
continue doing that for another layer, for the last layer just use sauce and cheese

looks good and almost ready to go in the oven

Bake at 375 for 45 minutes

Grandma's Grape-nut Bread

I have never had this bread but Mom and Aunt Diane say it is yummy.  I am super intreged by it becuase I enjoy grape-nuts, so I'm hoping this is a great bread, what a great way to start your morning. I like the idea of eating grape-nuts without having to let them soak for 30 minutes before eating them.  Make a double batch, freezes well. 

Ingredients:
1 cup sour milk (1 cup milk + 1 tbsp vinegar)
1 cup sugar
1/2 cup grape-nuts
2 cups flour - sifted
1 egg
1/2 tsp baking soda
1 tsp baking powder
1 tsp vanilla
1/2 tsp salt
1/2 cup chopped nuts

mix 1 cup sour milk, 1 cup sugar, 1/2 grape-nuts. them them stand overnight in the refrigerator

Sift flour

Add in all other dry ingredients

Mix in egg, vanilla and milk grape-nut mix

Pour into a loaf pan and bake at 350 for 45 min or until done, test with toothpick. 

Mine took about 55 mins to bake

Slice thin and serve with butter.

Grandma's Beef Strogonoff

It was a good night if we were having this for dinner!  I love the homey, cozy feel this dinner makes me think of.  Grandma would make a big pot of this and everyone would dig in!

Ingredients:
1 lb of Egg noodles
1 1/2 lb of beef 9 (I used thin cut round bottom steak)
8oz cream cheese
1 green bell pepper
1 med onion
1 can of cream of mushroom soup
milk
salt and pepper to taste
sour cream (optional topping)
*should have a can of mushrooms but I forgot them


Fry up the beef and then chop into strips

Chop up the green pepper and onion and saute them



mix the beef, onion, green pepper, cream cheese, can of cream of mushroom soup, on can of milk together to make the sauce. Also add a can of mushroom with the juice.

simmer sauce as you boil your noodles according to package

Drain noodles and mix the sauce in

Aunt Dora's Lemon Lust

This recipe came to me from looking through Grandma's recipe cards and Mom saying that this was yummy and that she and Aunt Diane used to eat it as a kid.  It is pretty easy to make and it is indeed a yummy treat!  This would be perfect for a summertime dessert because it is so light and refreshing. The crust is like a crumbly Pecan Sandie cookie! 
*OMG after have made and eating this OUTSTANDING dessert I have figured out why it is called lemon lust.  It is because once you have tasted it, you lust after it! 


Ingredients:
1 stick of butter
1 cup of flour
1/2 cup of chopped nuts
1 8oz cream cheese (at room temp)
1 cup powdered sugar
1 cup cool whip
2 pks instant lemon pudding
3 cups cold milk
cool whip to top


I chopped my nuts up in my chopper so that they were pretty fine, that way the crust wouldn't have a huge chunks of nuts.



melt butter and mix it with flour and nuts
spread mixture and press mixture into bottom of a 9x13 pan
bake at 350 for 15 mins, let cool

Mix cream cheese and powdered sugar together

mix in cool whip

Spread over mixture over crust

spread it gently as to not rip crust

Mix 3 cups cold milk and 2 packs of instant lemon pudding, mix until it is a little stiff


Spread over cream cheese layer

Cover the top with cool whip. 
Let it set in refrigerator until cold

I added some yellow sprinkles to mine to make it a little more festive!
